May the Blessings of Easter be with you.

I begin this month with a simple Irish blessing.

May love and laughter light your days and warm your heart and home.
May good and faithful friends be yours wherever you may roam.
May peace and plenty bless your world with joy that long endures.
May all life's seasons bring the best to your and yours.

The cold weather is still hanging around, but warmer temperatures are just around the corner. We all know it's bound to happen, hopefully sooner rather than later.

With that being said, the golf season is fast approaching and we are looking forward to a great, and busy, spring season at the Club.

I was thinking of a nice introduction for this month's newsletter, and every year as college basketball is winding down it makes me think of the Jim Valvano speech from many years past, that still creates emotions to this day.

For those who don't know Jim Valvano, "Jimmy V", was a college basketball coach for North Carolina State who was diagnosed with cancer in 1992, shortly after taking his underdog team to a National Championship. Jimmy passed away in early 1993, but despite his illness and pain, he made one last emotional speech on March 3, 1993 at the first WSPN ESPY awards. The following is an excerpt from that speech:

"To me there are three things we all should do every day. We should do this every day of our lives. Number one is laugh. You should laugh every day. Number two is think. You should spend some time in thought, and number three is you should have your emotions moved to tears. Could be happiness or joy, but think about it. If you laugh, you think, and you cry, that's a full day. That's a heck of a day! You do that seven days a week, you're going to have something special. ~Jim Valvano

So as he spoke during his speech he also said "time is precious and to keep your dreams alive." He stated "as cancer may ravage my body, it can never take my mind, my heart and my soul." Very powerful words from a man that knew he had only weeks to live.

The V Foundation for Cancer Research was founded in 1993 by ESPN and the late Jim Valvano. The foundations motto is "Don't Give Up…Don't ever give up."

Grab that cup of coffee...it's time for a snapshot of April's events in this month's fireside chat.

Fish Fry will be on Friday, April 2nd, offering all-you-can-eat fish, skinny fries, homemade coleslaw and hush puppies for only $16.99. We pride ourselves on having exceptional seafood and our breaded flounder is no exception to that.

The big event for April is our Easter Brunch on Sunday April 4th. In absence of last year's event this Willow Bend tradition has always gotten better each and every year. This brunch is always fantastic with plenty of food for everyone, so be sure to make your reservations soon and join us on this special day.

Prime Rib nights are back on Friday April 9th and Friday April 16th.

Sushi Night will be on Friday April 23rd. From "The Land of the Rising Sun" to chef's culinary table, we will feature eight different fresh selections on our Sushi Menu for the evening.

Fresh Catch will be on Friday April 30th. I am still checking to see what quality and supply is coming from the Pacific Ocean, but I will guarantee it will be the freshest I can obtain and absolutely have an Asian twist.

One last note…

Don't forget to take a look at our new Monthly Feature Menu for April. This month we will be visiting the Orient with our Asian dishes.
